4 Cold Soup Recipes for Summer Weight Loss

Cold soups are a great way to cut calories and help you stay cool during the summer.

When it gets hot out, it’s easy to reach for convenience foods that satisfy cravings. But studies have shown that adding soup to any meal can help you lose weight. Low-calorie soups contain fresh vegetables that provide essential nutrients, and help you feel fuller before a meal to reduce your calorie consumption and supply your body what it needs to function optimally. Try these 3 tasty cold soup recipes before lunch or any meal to cut your calorie intake by up to 20 percent!

1. Tomato Gazpacho Ingredients:

  • 4 Fresh, vine-ripe tomatoes
  • 1 cucumber
  • 1 cup plain croutons
  • 1 Tbs fresh garlic, minced
  • ¼ cup extra virgin olive oil (EVOO)

Directions:

Combine chopped tomatoes and diced cucumber with 1/4 cup extra virgin olive oil, croutons and 1 tablespoon of fresh minced garlic in a food processor and pulse until chunky. Garnish with fresh herbs like sweet basil, rosemary, oregano or dill and a drizzle of EVOO.

2. Cool Cucumber Soup Ingredients:

  • 2 cups low-fat plain Greek yogurt
  • 1 cups vegetable broth
  • 2 cucumbers, peeled and diced
  • 4 green onions, sliced
  • 2 Tbsp chopped fresh dill
  • 2 Tbsp chopped fresh parsley
  • 1 fresh lemon, juiced
  • 2 tsp sea salt

Directions:

In a large mixing bowl combine Greek yogurt and vegetable broth, then set aside. In a food processor, combine cucumber, green onion, dill, and parsley. Add the cucumber mixture, fresh lemon juice, and salt to the yogurt mixture and whisk to combine. Stir other cucumber and sliced green onions then refrigerate for at least an hour. Garnish each serving with chopped dill and parsley.

3. Spicy Avocado Soup Ingredients:

  • 1 ripe avocado, peeled, pitted
  • 1 can reduced sodium chicken broth
  • ½ cup reduced fat sour cream
  • 1 green onion, chopped
  • 1 – ½ tsps chopped fresh cilantro
  • Ground cumin to taste
  • Cayenne pepper to taste
  • Fresh ground pepper to taste
  • Sea salt to taste

Directions:

Place avocado in food processor and pulse, adding broth gradually until chunky. Add remaining ingredients and blend until smooth. Refrigerate for at least an hour, and serve chilled.

4. Energizing Honeydew Soup Ingredients:

  • 2 cups low-fat Greek yogurt, plain
  • ¼ cup soy or almond milk
  • 1 cup mint leaves, chopped
  • 1 large honeydew melon
  • 1 fresh lime, juiced
  • Chili powder to taste
  • Pistachios, chopped

Directions:

In a medium mixing bowl, combine yogurt, milk, mint leaves (with stems discarded). Put melon in a food processor and pulse until smooth. Then, in a larger mixing bowl, combine puréed ripe melon, lime juice and chili powder and refrigerate for at least an hour. Take out and stir and then refrigerate for another hour. Serve with a dollop of yogurt on top, and garnish with chopped pistachios.

All of these cold soups can help you loose weight when combined with regular exercise and a healthy diet. But remember, not all soups are created equal. For weight loss, broth-based soups are better as a rule, so stay away from creamy chowders, potato soup, and bisques.
